GUINESS BEEF STEW

Ingredients

  • 16 oz RB sirloin pieces
  • 4 oz OHA bacon, diced
  • 1 oz spanish onion, diced
  • 3 potatoes, peeled and chopped
  • 2 carrots, peeled and chopped

      SERVES 4

 

  • 8 oz Guiness draft
  • 1/4 cup flour
  • 2 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 1 bay leaf
  • 1/2 tsp thyme
  • 8 cups beef stock
  • salt and pepper

 

  1. Crisp bacon in pot, remove and set aside.
  2. Brown diced beef in bacon fat, add onion.
  3. Add flour and brown sugar to beef, stir until flour is blended.
  4. While stirring, add beef stock to pot, then simmer for 30 minutes until beef is tender.
  5. Add remaining ingredients, cook until vegetables are tender.
